Lucy’s List – April (week 2)

Things have been a bit busy here, with both kids and the husband at home for Easter. My home is a wreck and there is SO much washing to do. WHY do the school holidays seem to generate so many dirty clothes?! But the weather has been glorious. We’ve all spent a lot of time in the garden, having a tidy up and getting the veggie patch ready for planting.

I’ve found the slow cooker really useful and I’ve been using it at least a couple of times a week. We can have a family day out, or a full day in the garden, and come through the door tired and hungry to find a decent meal ready for us, instead of having to fall back on a takeaway or beans on toast.

 

MONDAY: shepherds pie (except I couldn’t be bothered so it was sort of deconstructed!) with mixed veg

TUESDAY: slow cooker mixed bean chilli with tortilla wraps, soured cream and grated cheese

WEDNESDAY: takeaway

THURSDAY: pork chops, garlic chipped potatoes, green beans

GOOD FRIDAY: my Mum’s roast turkey with all the trimmings, followed by my Grandma’s chocolate Easter nest

SATURDAY: honey and soy glazed salmon with veggie fried rice

EASTER SUNDAY: slow cooked roast beef with horseradish, spuds, veg and proper gravy…

…followed by simple lime pie

    I vote for salmon, love the honey on it. I use maple syrup sometimes. Great Easter dinner you had there.

      We eat a lot of salmon. One of the girls’ favourites!
