Lucy’s List – January (week 2)

So here we are. Back to proper, normal, everyday meals that don’t require a sofa nap afterwards to aid digestion.

The lentil cottage pie is full of good stuff but I always add lots of extra veg into meals like lasagne and my meatball sauce too. Onion, carrot, celery, mushrooms, peas and tinned tomatoes all get thrown in and sometimes we have some sort of green vegetable on the side too – broccoli, green beans, cabbage, or runner beans are favourites. Packing in the good stuff gives us an extra boost of vitamins to get us through the dark days.

It’s been really cold and wet and dreary here all week so good, hearty comfort food is needed to give us all an energy boost as well as a mood boost. Meals also need to be fairly thrifty for January because HOW long is it til payday exactly?!

 

MONDAY: sausage meatballs in tomato sauce with rice

TUESDAY: lentil beany cottage pie

WEDNESDAY: sausage and onion baps

THURSDAY: lasagne with green beans (my basic white sauce recipe is available here)

FRIDAY: battered cod, oven chips and peas

SATURDAY: chicken, bacon and celery stew

SUNDAY: beans on toast

    We have another week to go before payday. It’s always tight but fortunately we filled the freezer last check. I need to get some chicken out to thaw.

      It’s good, eh. We don’t even notice the lack of meat coz it’s so flipping tasty.
