Happy new year, everyone! How are we doing? Back into our routines? Anyone got the January blues? So skint you could cry?!
I must admit I’m not enjoying being back on the school run but I was feeling a bit sluggish after two weeks of sitting on my bum, eating lots of scrummy food (chocolate, cheese, pate, cold cuts, cream on everything. Mmm … creeeeam …). But we all know we can’t carry on like that forever.
So this meal plan is evidence of my slovenly ways in the week after Christmas. Very little cooking, lots of leftovers, and THREE takeaways in one week! I was relieved that I’d had the foresight to freeze a few extra batches of soup and chilli before Christmas, so we at least had some sort of decent nutrition during the week. It was almost a relief to get down to writing my January meal plan after this lot!
MONDAY: bacon and chestnut fried rice with mushrooms and peas
WEDNESDAY: sprouty chestnut curry thing
THURSDAY: New Year’s takeaway!
FRIDAY: freezer roulette (turned out to be chilli, with tortilla chips and soured cream)
SATURDAY: post-panto Burger King
SUNDAY: breaded chicken breast, oven chips and mixed veg
