I’ve included a couple of extra days on this week’s plan. It’s nearly payday so I always make sure I’ve got enough days planned out to last until then.
You may also notice a cheeky takeaway – WOOHOO! Everyone looks forward to takeaway night, don’t they? If you have young kids, it’s not always easy to arrange a night out. Or you might just be a totally unsociable hermit, like me and The Husband, and prefer to stay in where it’s safe and cosy and a lot less effort! So get the kids off to bed, ring through your order (I’ll have one of EVERYTHING, ta!), stick the telly on and crack open a bottle of something cold.
MONDAY – chicken, bacon and butterbean stew, dumplings and green beans
TUESDAY – broccoli and gruyere quiche with salad
WEDNESDAY – crab and sweetcorn noodle soup, prawn crackers and spring rolls

SATURDAY – TAKEAWAY!!!
SUNDAY – roast beef, spuds, carrots, parsnips, brussel sprouts and gravy
MONDAY – lemon chicken tray bake with roasted Mediterranean veggies

So that’s the end of the first month of Lucy’s List. Thanks for taking the time to read it. Payday means it’s time to think about next month’s meals. Is there anything you’d like to see? Come on, inspire me! I need ideas!
